Crockpot Roast with Ginger-ale Mushroom Onion Gravy

Crockpot Roast with Ginger-ale Mushroom Onion Gravy

This delicious crockpot roast has a delicious gravy with a surprising ingredient: Ginger-Ale!

This is now my favorite crockpot roast recipe as all others fall short in the flavor department.

Crockpot Roast with Ginger-ale Mushroom Onion Gravy

Ingredients:

3 pound sirloin tip roast
1/3 cup all-purpose flour
1/2 envelope onion soup mix (using full envelope makes it too salty)
1 envelope mushroom gravy mix (may use brown gravy mix instead)
2 cups ginger ale

Directions:

Grease the inside of your crock pot with Crisco.  Place the roast in the crock pot.  Whisk together the rest of the ingredients in a small mixing bowl. Pour over the roast, cover and cook on low for 8 hours.

Whisk the gravy and flip the roast over every couple hours.

Slice and serve with mashed potatoes or cooked rice.

Crockpot Field Peas & Ham

Crockpot Field Peas & Ham

It’s summertime and this time of year you can find fresh field peas at your local farmer’s market.  Here’s an easy way to cook those fresh peas in the crockpot.  You can also use fresh frozen peas.

Ingredients:

6 cups fresh field peas (shelled and rinsed)
1 envelope onion soup mix
water
1 ham steak, diced

Directions:

Place the peas in your crockpot and add enough water to just cover the peas.  Dump in the soup mix and stir in the diced ham.

Cook on low for approximately 2 – 3 hours.  Check the peas for doneness by squishing the pea with your fingers to see if it’s softened up.

*You could do the same thing with dried blackeyed peas that have been pre-soaked and rinsed, but look for frozen peas and use them if possible.  They taste so much better than dried peas.

Serve over steamed rice with diced onions (optional) and cornbread.

BBQ Cornbread Waffle Sandwich

Barbecue Cornbread Waffle Sandwich

BBQ Cornbread Waffle Sandwich

No buns?  No bread?  No Problem!  Just whip up some waffles using cornbread batter and use the waffles as your buns.

Use your favorite BBQ beef or pork to top the cornbread waffles, top with additional BBQ sauce and French’s french fried onions.

Here’s the recipe I used for the cornbread waffles:

1 1/4 cup self rising flour
3/4 cup self rising cornmeal
2 tablespoons sugar
2 eggs
1 1/4 cup milk or half & half
1/4 cup cooking oil

Whisk together the above ingredients in a mixing bowl.  Make waffles according to your waffle maker’s instructions.

Maple Chili Dump Chicken

Maple Chili Dump Chicken

Dump recipes are so very simple and fast to prep.  Just dump all the ingredients into a zip top bag, mix up, and dump it in your baking dish or crockpot.  Great to make up a bunch of different flavors and freeze to cook later.  Enjoy with your favorite side dishes.

Maple Chili Dump Chicken

1 1/2 lbs chicken pieces
1/2 tsp salt
1/2 cup maple syrup
1 tbs chili powder

To cook immediately:

Place all ingredients in a large baking dish, turn chicken to coat.  Bake until juices run clear. (45-60 minutes for chicken pieces, 20-30 min for boneless breasts)

To freeze and cook later:

Place all ingredients in a large freezer bag.  Lay flat in freezer.  To thaw and cook: take bag out of freezer the night before.

Oven: Preheat oven to 350.  Empty contents of bag into a large baking dish and bake as above.

Crockpot: low 6-8 hours, high 3-6 or until done.

On grill – cook over med heat until juices run clear.

Maple Chili Dump Chicken Recipe

Mexican Chicken Casserole With Green Enchilada Sauce

Mexican Chicken CasseroleMexican Chicken Casserole with Green Enchilada Sauce

This year for Cinco de Mayo, I made this yummy Mexican Chicken Casserole.  It’s a casserole made with layers of Mexican flavored shredded chicken, corn tortillas, a creamy chicken green enchilada sauce layer, corn, black beans and loads of cheese.  It’s really delicious so give it a try!

3 cups cooked chicken, shredded
1-12 oz. can chicken broth
1-10 3/4 oz can cream of chicken soup
1-12 oz. can corn (Mexicorn)
1-12 oz. can black beans, drained
1-8 oz. bottle green taco sauce or 1 can green enchilada sauce
1/2 cup fresh salsa
1/4 cup fresh cilantro leaves
15 corn tortillas
3 cups shredded cheddar cheese

In a large bowl, whisk together the soup and half the broth.  Stir in the shredded chicken, green taco / enchilada sauce, corn, salsa, black beans, cilantro and 1 cup of cheese.

Layering the Mexican Chicken Casserole

Layer 6 of the corn tortillas in the bottom of a 9’x13′ glass baking dish.  Top with half of the chicken mixture.  Repeat layers.  Take the remaining tortillas and slice into rectangles.  (I use a pizza cutter for this.)  Sprinkle them on the top of the casserole.  Top with the remaining cheese.  Pour remaining chicken broth over the casserole.

Bake at 350º F for 20 – 30 minutes.

Serve with Salsa, Sour Cream, Guacamole, Jalapenos.
