Pizza Crust

1/3 cup warm water, plus 1 tablespoon
3/4 teaspoon yeast
1 teaspoon sugar 
1 cup bread flour
1/2 teaspoon salt
1/2 tablespoon olive oil
Dissolve yeast and sugar in warm water in a small bowl.  Let sit for 5 minutes until the surface of the mixture turns foamy.  (If it doesn’t, your yeast was bad or the water too hot, try again…)
Sift together the flour and salt in medium bowl.  Make a depression in the flour and pour in the olive oil and yeast mixture.  Use a fork to stir the liquid gradually drawing in more flour as your stir, until all the ingredients are combined.  When you can no longer stir with a fork, use your hands to form the dough into a ball.  
Knead on a lightly floured surface for 10 minutes, or until smooth.  Form the dough into a ball, place in oiled bowl, turning to coat the dough.  Cover with oil-sprayed plastic wrap, let rise in warm place for 2 hours to allow dough to double in size.  Punch down the dough and put it back into the bowl, cover and refrigerate overnight.  Take dough out 2 hours before you plan to make your pizza to let it warm up to room temperature.
Roll out dough on floured surface until very thin and 10 inches in diameter.  Put your pizza crust on a baking sheet or pizza pan.  Spread with sauce, add toppings and cheese.

Bake 10-12 minutes or until crust is light brown in very hot oven (450º-500º).

Boboli Pizza Crust Clone Recipe

1 cup water
2 tablespoons olive oil
1 teaspoon garlic, minced
1 teaspoon salt
1 tablespoon sugar
3 cups all-purpose flour
1/2 teaspoon italian seasoning
2 teaspoons parmesan cheese
2 teaspoons active dry yeast
2 teaspoons parmesan cheese, to sprinkle
Add all ingredients (except second parmesan cheese) to breadmaker in order listed by your manufacturer.
(put the garlic down inside the flour so it does not slow the yeast) Set breadmaker on dough setting.
When cycle is done, form two crusts on pizza pans, sprinkle with parmesan cheese, cover and let rise again.  Brush outer edge of crust with olive oil.  Poke a few holes in crust with a fork.  Bake 5-10 minutes at 450 F until light brown.  Cool.  Wrap tightly in foil and freeze or use immediately.

Biscuit Pizzas

1 package Grands Buttermilk Biscuit dough
1 cup pizza sauce
1 cup mozzarella cheese, shredded
pepperoni, or your favorite pizza toppings
1. Press each biscuit to a 6″ round and place on greased cookie sheets.
2. Top with pizza sauce, cheese and pepperoni.
3. Bake in 375 degree oven, 10 – 15 minutes.
*Vegetarian: omit pepperoni

PEANUT SAUCE CPK
1 boneless chicken breast, half, skinless, cut into bite-sized chunks
1 1/2 teaspoons olive oil
1 1/4 cups mozzarella cheese, grated
1 to 2 green onion tops, julienned
1/2 cup bean sprouts
1/2 carrot, julienned or grated (1/4 cup)
2 teaspoons fresh cilantro, minced
1 tablespoon peanuts, chopped fine

Place chicken in zip-top bag, add 1/3 of the peanut sauce, seal and refrigerate for 2 hours. Heat 1 tsp. oil in a small pan over medium-high heat. Cook the marinated chicken for 3-4 minutes.
Prepare pizza crust, or use ready made bread shell. Top crust with remaining pizza sauce. Sprinkle 1 cup of mozzarella cheese over sauce. Sprinkle julienned green onion tops over cheese, followed by the chicken, bean sprouts and carrots. Top with remaining cheese, cilantro and nuts.
Bake for 10-12 minutes or until crust turns light brown.
Cut into 8 slices.

Southwest Chicken Pizza – California Pizza Kitchen Copycat

1 tablespoon fresh lime juice
1 tablespoon olive oil, plus 1 teaspoon
1 tablespoon soy sauce
2 cloves garlic, minced
2 teaspoons fresh cilantro, chopped
1 teaspoon crushed red pepper flakes
1 boneless chicken breast, cut into bite-sized pieces
3/4 cup black beans, refried or black bean dip
1 tablespoon water
1/4 teaspoon cayenne pepper
1/4 cup white onions, sliced
1 green chili, canned, whole
1/2 cup Monterey Jack cheese, shredded
1 cup cheddar cheese, shredded

Make marinade by combining lime juice, 1 tablespoon olive oil, soy sauce, garlic, cilantro, salt and pepper flakes in a blender or small bowl with an electric mixer until well mixed. Marinate the chicken for 2 hours. Heat one teaspoon oil in small skillet over high heat. Cook chicken 2-4 minutes or until cooked through. Mix black beans with water and cayenne pepper.
Roll out pizza crust or use prepared crust. Preheat oven to 475. Spread black bean mixture over crust, arrange chicken evenly over beans. Top with onions. Thinly slice the chili pepper into strips. Sprinkle over onions. Top with cheeses. Bake for 12-15 minutes or until pizza crust lightly browns.
Serve with tomatillo salsa and sour cream on the side.
